Le lait est ensemenc\u00e9 avec des ferments puis empr\u00e9sur\u00e9, ce qui permet la formation du caill\u00e9. Le fromager d\u00e9coupe ensuite le caill\u00e9, le brasse, le r\u00e9chauffe, le file ou le p\u00eache puis le moule ou le fa\u00e7onne. Toutes ces op\u00e9rations sont effectu\u00e9es selon la recette propre \u00e0 chaque fromage mais le ressenti, et le jugement du fromager sont primordiaux.<\/p>\n<p>Les fromages sont ensuite press\u00e9s puis sal\u00e9s.
